The Jean Collet domain was founded in 1952, and later his son Gilles reinforced the team. The winery and the cellars are located in the heart of Chablis. The vineyards are situated on the best slopes of the left and right banks of the Serein river. 37 Hectares are divided between Chablis Grand Cru (0.51ha), Chablis Premier Cru (17.71ha), Chablis (16.4ha) and Petit Chablis (1.65ha). The philosophy of Domaine Collet & Fils is to cultivate the vines according to the lutte raisonnée principle, in order to do justice to the unique terroir. This Chablis has a cold peel maceration, followed by temperature-controlled fermentation in stainless steel vats. The wine continues to mature "sur lie" until bottling, which takes place in July each year after the harvest.
Chablis is the most northerly region of Burgundy and is characterised by its freshness. The vines are planted on a soil consisting of layers of chalk and clay. This results in beautiful notes of passion fruit and citrus. Refined structure in the mouth. Chablis is nicknamed oyster water because it is a fantastic combination. This wine also goes great with mussels, scallops or a mature goat cheese. This Chablis has an intense bouquet of ripe and exotic tones. In the mouth it is full, soft and juicy, followed by a long finish with much finesse. What a complex wine!
