Domaine Faiveley dates back to 1825. Family owned for 7 generations, the domain is located in Nuits-Saint-Georges, in the heart of Burgundy. 127 hectares of vineyards, spread over the Côte de Nuits, Côte de Beaune and Côte Chalonnaise, of which 12 vineyards with Grand Cru classification, 25 with Premier Cru classification and 6 vineyards with a "Monopole" classification. The estate is managed by Erwan Faiveley, who manages the work in the vineyards in-house to maintain control over the quality of the grapes. The hand-picked harvest is carefully transported to vaulted cellars from the 19th century, located in Nuits-Saint-Georges.
To make great Burgundy, Erwan Faiveley combines the principles of modern oenology with traditional aging in French oak barrels. All this contributes to Faiveley wines being highly regarded. Climate/Terroir Calcareous clay soil. Vinification The vinification and aging of this wine follows the same procedures as in Nuits-Saint-Georges, for their wines from the Côte de Beaune and the Côte de Nuits.
When the grapes reach their ideal ripeness, they are picked and transported in small boxes to the fermentation cellar in Mercurey. The grapes are sorted, cleared without being pressed and placed in the vat using small stainless steel containers. The harvest is cooled: that is the pre-fermentation maceration. The alcoholic fermentation then lasts about 10 days and is immediately followed by the tapping. The run-off is done by gravity and the trot is put into the pneumatic press with an elevator. The press wine is filtered and mixed with delek wine. The wine then matures completely in oak barrels (15% new barrels) for 11 months. The wines are tapped in Mercurey and then transported to Nuits-Saint-Georges. There they are reassembled and bottled. Grapes 100% Pinot Noir.
This wine offers a powerful nose with lots of fruit in which the delicious aromas of red fruits, black fruits and woodsy notes go together. In the mouth, however, it only develops its true potential: powerful and fleshy at the same time, with flavors of raspberry and other ripe red fruits, as if you were biting into the real fruit. The structure is powerful, the tannins are velvety and the finish is fruity and sufficiently long.
