The story of Constantia began no less than 300 years ago in South Africa, when Simon van der Stel founded the winery in 1685. He named his property after the daughter of the benefactor who gave him a farm under a picturesque mountain range. The lush surroundings and moderate temperatures were good for agriculture and Van der Stel started planting orchards and vineyards. Constantia Uitsig is now one of a select number of wineries that make up the Constantia Valley Wine Route. Constantia Uitsig has a long and rich cultural heritage. They are committed to the greenest building and agricultural practices, hoping to create a space that is both beautiful and varied.

The bunches are carefully pressed to obtain the cleanest juice possible. Part of the juice is first matured in oak barrels, very clever because this gives a very full Cap Classique. After maturation, this Constantia Uitsig Method Cap Classique undergoes a 36 month aging with yeast in the cellars of this beautiful winery. So it gets all the peace and quiet to create the most beautiful and finest bubbles.

The Constantia Uitsig Method Cap Classique Brut has a nice light pale colour as befits a blanc de blanc (100% Chardonnay). In the nose we smell notes of almond, apple pie, pears and honey, complemented by a hint of citrus and a little brioche/vanilla. On the palate, a delicate bubble, a firm pallet and many fruit notes of apricots, pears, red apples and light wood tones. This is delicious as an aperitif and also delicious with fish, soft white cheese and with a dessert with fruit.
