Bianco di Alessano, from which this 30 Vecchie Vigne is made, is a local grape variety in Puglia. A unique species that only occurs in this place. This grape gives the wine a creamy texture and fruity aromas. And that is what makes this yellow wine so delicious. A pleasant wine that can be served with many dishes.
Although CignoMoro only started producing wine under its own brand in 2001, the history of winemaking in the family of the owner, Ciro Matichecchi, started as early as 1921. At that time, Ciro's grandfather bought the vineyard and started growing in it. to work. For many years his grandson turned to viticulture, which resulted in CignoMoro. It is a winery that beautifully combines the ancient Italian tradition of winemaking with modern production technology.
The Salento peninsula, where the winery is located, is part of the beautiful region of Puglia in the far south of Italy. It is located right between two seas, which together with the hot southern sun create great conditions for growing vines. Plenty of sunlight, fertile soil and the sea breeze combine the climatic characteristics that make the grapes perfectly ripe, sweet, juicy and yield equally excellent wines.
The grapes are picked by hand and gently pressed. After thorough milling, the grape must is fermented in French oak barrels and aged in the sediment for 3 months. After bottling, it spends an additional 6 months aging in the bottle before being released on the market.
The wine is 100 percent made from the fruit of 30-year-old vines of the Bianco di Alessano variety. It is yellow with golden reflections. The bouquet opens with aromas of ripe apples and citrus, emphasized by notes of butter and nuances of smoke. It spreads on the palate with a creamy texture with a hint of walnuts and almonds, balanced by a fresh note of lemon zest. It leaves a pleasant almond cake taste in the mouth. This wine goes well with poultry, light pasta or seafood dishes.
