Canalicchio di Sopra is the story of a winery that encompasses the history of viticulture in Montalcino over the past 50 years, its growth and worldwide success. The first bottle of Canalicchio di Sopra Brunello di Montalcino was produced in 1966. In 1967, Canalicchio di Sopra was one of the twelve founders of the Consorzio del Vino Brunello di Montalcino. A conscious decision was made to work with only one grape variety; the Sangiovese. Over time, the winemakers have discovered the unique characteristics of this grape variety and that it develops differently on each cru. That's why the winery wanted to build its identity.
After the manual harvest, the grapes can expect a strict selection. Only the best juice ends up in the bottle. After the harvest, the skins are soaked for a period of 15 to 20 days. The alcoholic fermentation takes place in stainless steel vats under controlled temperatures. Finally, the wine rests for 36 months in Slavonian barrels and then for 1 year in bottle.
