The Valpolicella Ripasso is also called the baby Amarone. This is because the way the grapes are used is similar. In addition, Amarone grape must is added in the second fermentation. The Corvina, Molinara and Rondinella grapes are harvested manually and brought to the winery in small crates. Here they are gently pressed and raised on wood.
